Pico de Gallo is considered one of my “free” foods, because it’s a super low in calories condiment chock full of nutrition and fiber that will help fill you up–not out. So feel to load up and enjoy this recipe without feeling guilty!
2 cups ripe red tomatoes, diced (about 4 medium tomatoes)
1 clove of garlic, minced
1/4 cup onion, diced (about 1/4 of a small white onion)
1/4 cup cilantro, chopped
2 jalapenos (stems and seeds removed), diced
1 lime, juiced
1/2 T olive oil
Salt to taste
1. Mix all the ingredients and let it sit for half an hour.
2. Serve immediately. Yields: 2 cups
