If you love guacamole, but hate the all the calories, here’s is a simple way to cut the fat and add some fiber—just by substituting peas for avocados and doubling up on the tomatoes! My Mock-a-Mole is so vibrantly festive, but missing all those sneaky calories from fat.
1 avocado, peeled, pitted,
and mashed 1 cup cooked green peas
½ cup fresh tomato, chopped (I like using romas)
2 tsp. fresh cilantro plus more for garnish,
chopped 1 tsp. red onion,
chopped 1 tsp. fresh parsley,
chopped 2 tsp. fresh lime juice
1 tsp. Worcestershire sauce
1 tsp. garlic salt
½ tsp. black pepper
¾ tsp. Tabasco sauce
½ tsp. ancho chili powder
Directions: Combine all of the ingredients in a large bowl and blend with an immersion blender until smooth. Garnish with cilantro. Serve with tortilla chips, whole grain crackers, and raw vegetables. Yields about 1 ½ cups.
