Grilled Salmon with Fresh Avocado Salsa

Salmon Rub Ingredients

4-6 ounce salmon fillets with skin on
1 T good quality extra virgin olive oil
1 tsp. sea salt
1 tsp. ground coriander
1 tsp. ground cumin
1 tsp. paprika powder
1 tsp. onion powder
1 tsp. black pepper

Avocado Salsa Ingredients

1 avocado, peeled, seeded, then sliced or cubed
1 medium tomato, cubed and seeded
1 small red onion, sliced or diced
2 mild hot peppers, seeded and deveined, then diced
Juice from 2 fresh limes
2 T. extra virgin olive oil
2 T. fresh cilantro, finely chopped
Sea salt to taste

1.Mix the salt, coriander, cumin, paprika, onion and black pepper together, rub each salmon fillet with olive oil and seasoning mix. Then, refrigerate for at least 30 minutes.
2. Pre-heat the grill or if inside preheat your pan grill or broiler.
Combine the avocado, onion, hot peppers, cilantro, lime juice, olive oil, tomato, and salt in a bowl. Mix well, and chill until ready to use.
3. Grill the salmon fillets with skin side down to your desired doneness, topping each salmon fillet with 1 heaping tablespoon of avocado salsa before serving. Makes 4 servings.
